Classic case of not knowing what I was doing. Went back in and figured out that the CPU-BUS speed was the culprit. Set it back to 200 and now everything is running smooth as can be.
I was setting the DRAM at 1333 and bumping it up to 1600 by raising the CPU Frequency, this was causing the processor to jump up to 3.8 and making the system unstable, so I set it at 1600 and left the frequency at 200.
I'll post my settings just incase anyone eles has the same problem.
