Success!!
Ok so what I did was:
-I shut down my system
-Installed the 6GB 3x2 Kit
-Powered on
-the system didn't boot so i let it power cycle and use the reset to defaults temporarily feature (this is the best feature of this board it lets you boot if your OC settings don't work, but it keeps the setting for you to adjust them once you get into bios)
-once I got into the bios I dropped my cpu base-clock to default settings but manually set them
-I manually set the voltage for my ram to 1.66v
-I disabled XMP and the Cas settings defaulted to 8-8-8-20-2N
-I then booted into windows with the full 18GB recognized @ 1066 ran some everest benches to compare the benches I took on the 12GB @ 1600 Kit went from 17000 to 15500 on the read bench
-rebooted adjusted the ram speed to 1600, rebooted full 18GB recognized @ post went into windows, ran some benches and they were pretty much Identical to the 12GB @ 1600Mhz

SO I've got both Kits working @ 1600 at Cas settings of 8-8-8-20-2N 1.66v
I did attempt to run cas settings of 7-8-7-24-2N but it wouldn't post at those settings, but the difference between cas 7-8-7-24 & 8-8-8-20 are pretty minute as far as I can tell.
Ran my 3DMark Vantage & 06 benches and got same scores as the 12GB @1600 7-8-7-24!
My system feels the same interms of performance, now but I deffinetly saw a difference when I booted into windows with 1066Mhz and stock cpu.
So my settings are as follows:
Ram: 18GB @1600Mhz 8-8-8-20-2N
CPU: i7 930 2.8Ghz (O/C to 3.5)
Bios settings:
CPU x21
BaseClock: 160
Ram: 1.66v
3DMark06: 20150 (5770 1GB XFire)
3DMark Vantage: P15525 (5770 1GB XFire)
I do have a question though, I feel like I should be getting high benches in 3DMarks, what's your opinion based on my current setup?
Mobo: Gigabyte X58A-UD3R rev1.0 bios = F5
Ram: 18GB @1600Mhz Cas 8-8-8-20-2N
Grafx: 2xXFX 5770 1GB juniper in xfire
CPU: i7 930 @3.5Ghz
HDD: WD 500GB 7200rpm 16MB Cache
Monitor for gaming: 37" 1080p Sceptre LCD 60Hz
My average Crysis Warhead scores are 58-65fps on enthusiast @1080p
