I purchased G.SKILL F3-1866C8D-16GTX 16GB (2X8GB) DDR3 PC3-14900 1866MHZ TRIDENTX DUAL CHANNEL KIT and I saw that there are two XMP profiles available, both supporting 1866MHz. Can anyone tell me what is the difference between them?

The differences are probably in the command rate and some secondary timings only. You can compare them via Aida64 or HWInfo64. If the XMP with the tighter timings is stable for you, then stick with it.
